I like to go overboard for the holidays. I’m just a sucker for having an excuse to make lots of good food and share some smiles.

Last year, Ann talked me out of making tons of food for Thanksgiving so it was tame and all we had were some cornish hens. She didn’t get so lucky this year and I got to make what I wanted. Behold!

Thanksgiving at the Ko house!

On the menu…

Herb roasted turkey, brined for 14 hours

Butternut squash soup drizzled with Tarragon oil

Boston lettuce and pear salad with a celery seed dressing

Spicy green bean and kale tossed with lemon juice and parmesan

Heavy mashed potatoes

Yams baked with butter and brown sugar

Vegetable medley

Corn-on-the-cob

Cranberry sauce from a can

Dinner rolls

Cream cheese pumpkin pie

(Not pictured) Home-made baked macaroni and cheese mixed with broken shards of glass

I was pretty bummed about the mac n’ cheese. It was the first time I made it from scratch but I never got to taste it. I was cooking up a storm but I ran out of serving plates and counter space. So I left it on our stove in the meantime. I started working on the green bean dish and turned on the wrong burner. As I was draining the potatoes, I hear a REALLY LOUD pop. I look back and I see the dish I baked the macaroni and cheese in had shattered. Glass was everywhere, I ended up stepping on a shard and cutting my face and hand.

Ann came home a few minutes later and saw my mess and asked if she could still eat some of the mac and cheese off the top. I just gave her a look as my answer. All-in-all it was still a wonderful thanksgiving. First time my turkey came out pretty moist, I won’t dread eating leftovers for the next year.
